Threw this together for myself and husband before running out the door to the office this morning.
-grilled chicken breast, cut in to cubes
-can black beans, rinsed and drained
-1/2 red or orange bell pepper
-diced1/2 small jicama, peeled and cut in to matchsticks
-1 apple, peeled and cubed
Dressing (use half for salad):
-juice of one orange
-juice of two small limes
-juice of 1/2 lemon
-1 clove garlic
-1 small shallot
-1 fist parsley
-1 fist cilantro
-1 tbsp dijon (i used the grainy country style)
-extra virgin olive oil to taste/consistency
-cumin to taste
-garlic powder to taste
-salt to taste
-pepper to taste
Blend all ingredients in blender. Toss in to salad. Before eating you could add some shredded cabbage to this.
